Gozleme (Meat)
Traditionally eaten at breakfast, Gozleme is the Turkish cousin of Moroccan msemen — the dough is rolled out thin with flour rather than oil or butter, folded around its filling and cooked on a hot pan with just a little butter. This one is filled with seasoned minced meat and onion, giving a thin, crisp-edged flatbread with a savoury centre. Best eaten hot, cut into wedges, with ezme or a cup of tea.
